Menu Plan Monday: 4/14/14-4/20/14


Is it Spring where you're at?  I'm just East of Raleigh, NC, and everywhere is colors galore -- pink & white dogwoods, hot pink, white & purple azaleas, lavender wisteria -- and absolutely gorgeous.  Spring is definitely here!

Which has given me some motivation to come out of hibernation and take myself and the kids to the park for fresh air and exercise, something I could definitely use more of!

Here is the menu plan that we had last week (I post the menu plan on a 1 week lag so I can have plenty of time to post some recipes during the week & link them to the menu).

Monday -- Coconut Shrimp & Mussels, White Rice, Steamed Summer Squash, Broccoli
Tuesday -- Grilled Chicken Salad, Dilled Zucchini, Pears
Wednesday -- Macaroni & Cheese, Hot Dogs, Broccoli (It was my son's birthday, so I made some of his favorite foods as a special treat for him!)
Thursday -- Loaded Baked Potatoes (using leftover grilled chicken, a little bacon and shredded Parmesan cheese), French-style Green Beans, Parmesan Summer Squash, Rolls
Friday -- Spirit Night at Chick-Fil-A to support a local charitable organization
Saturday -- Dinner at Pizza Inn (I I had taken out of the freezer what I thought was cooked chicken in preparation for supper, but once I began making supper, I realized that it was actually leftover potatoes!  :(  I was completely thrown off & had no idea what to do at that point, so we ended up going out to eat.)
Sunday -- Potluck supper at church (I brought Pigs in a Blanket.)
