Looking for a healthy alternative side dish to your meals, something beyond the mundane green beans, peas, corn or carrots? I loved traditional Carrot & Raisin Salad when I was a kid, but it's not exactly "healthy." Several years ago, I came across this healthier version, and loved it. You can use either raisins or dried cranberries (craisins), depending upon your taste buds. Raisins give it a sweet quality; dried cranberries a tartness. Another great thing to note about this recipe is that it is super easy to make!
Healthy Carrot & Craisin Salad
Ingredients:
4 med. carrots, shredded
1/4 cup dried cranberries or raisins
2 tsp sugar
juice of 1 lemon
Directions:
In a medium bowl, thoroughly combine all ingredients. Serve chilled.
