Wok's for Dinner: Poultry Seasoned Meatballs


Meatballs are always a hit with my family.  I have a couple recipes that I usually stick to, but once in awhile I like to pull something different out of my recipe hat just to keep the family on their toes. ;D

This particular recipe came from my grandmother.  I've made it only a few times, but I always like it.  And the family definitely chowed down on these, as usual, which of course made me one happy mama.  My husband even saved some meatballs to eat for breakfast this morning!!

Poultry Seasoned Meatballs

Ingredients:
20 oz ground turkey (you can also use ground beef, ground chicken, or ground venison)
1 1/2 sleeves unsalted saltine crackers, crushed fine (my Grandma uses 20 Ritz crackers in her recipe)
2 eggs
1/2 cup milk
1 large onion, diced fine
2 tsp salt
1 tsp pepper
1 Tbsp poultry seasoning
2 cans (10 3/4 oz each) tomato soup
1 Tbsp olive oil

Directions:
Mix all ingredients well in a medium bowl except sou and olive oil.  Shape mixture into meatballs.  Heat oil in a large skillet over medium heat; add meatballs and brown on all sides.  Drain any grease, leaving at least 1 tsp of oil in skillet.  Turn heat to low and add tomato soup.  Stir well, scraping any meat drippings in the skillet.  Fill both soup cans 3/4 full of water; pour into skillet with the soup and stir well.  Cover; let meatballs and soup mixture simmer for 20-30 minutes on low heat.
