Wok's For Dinner: Salmon Patties (a.k.a. Krabby Patties)

After dishing these up, I had a brief moment that I feared the kids would not like these. So I jokingly called them "Krabby Patties" (like as in Spongebob). The kids gobbled them up, especially Little Miss who ate nearly an entire patty herself! This recipe is a much healthier alternative to traditional Salmon Patties, which are fried in oil. Instead, these patties are baked up in the oven.

Salmon Patties

Ingredients:
2 pkgs Bumblebee salmon (in the tuna fish section of your grocery)
1 egg
2 tsp Dijon mustard
2 tsp low-fat mayonnaise
1 green onion, finely chopped
1 celery stalk, diced fine
1 Tbsp dried parsley
1/4 tsp ground black pepper
1 - 2 tsp lemon juice
3/4 - 1 cup breadcrumbs

Directions:
Preheat oven to 450 degrees. Spray a baking sheet with nonstick cooking spray. Mix all ingredients together in a medium bowl. Shape salmon mixture into 8 patties and place on prepared baking sheet. Bake in oven about 15 minutes, or until golden brown on top.
