So I gave it a try. It was rather tasty, a little tart thanks to the lemon juice and shredded apples. Overall, a healthy meal, and a nice alternative to a bowl of cereal for breakfast.
Apple Date Yogurt
Ingredients:
4 apples, peeled and shredded
1 Tbsp lemon juice
1 Tbsp honey
1/2 cup dates, chopped
1 cup nonfat plain yogurt
1/4 cup chopped walnuts
Directions:
In a large bowl, mix the apples, lemon juice, honey and dates. Hindsight is 20/20, 'cause I should have mixed the lemon juice just a little sooner with the apples to keep them from browning up.
Looks good, De. I'm thinking I'll have to try making apple date oatmeal next time we make instant oatmeal. I'll put this yogurt in my "things to try someday" file. Thanks!
