Wok's For Dinner: Apple-Cherry Stuffed Pork Chops


I've waited all year to make these chops. Waiting for the time when bing cherries are in season and their price drops to super low affordable! Last weekend, I picked up a bag of bing beauties for $1.99/lb. And that meant making some Apple-Cherry Stuffing, a delicious way to prepare baked pork chops.

Apple-Cherry Stuffed Pork Chops

Ingredients:
1 Tbsp olive oil
2 celery stalks, chopped coarsely
1/2 large onion, chopped
2 Tbsp butter or margarine
1 1/2 cups water
1 6-oz pkg stuffing mix (I used low-sodium chicken flavor)
bing cherries, slicked in half with pit removed, enough to make about 1 cup
1 Granny Smith apple, peeled, cored and chopped
4 boneless pork chops

Directions:
Preheat oven to 350 degrees. Heat olive oil in a large skillet over medium heat. Stir in chopped celery and onion; cook until just tender. Add butter and stir in water; bring to a boil. Stir in stuffing mix, cherries, and chopped apple; cover and remove from heat. Let sit about 5 minutes. Meanwhile, place chops into a baking dish. Cover chops with Apple-Cherry Stuffing. Place baking dish in oven and bake for 40-45 minutes.
