Wok's For Dinner: Zesty Italian Pasta

We were supposed to have Broccoli Baked Potatoes on Thursday night. Unfortunately, that didn't happen. I didn't get off work until after 7pm because I had an employee who sustained an injury at work. The employee is all right, but because I got home so late, hubs heated up a couple pizzas in the oven for dinner. I could have made the potatoes tonight, but I didn't want to push back the rest of the meals that are planned for this week. So I made the pasta dish. We had a tossed salad and, instead of cucumbers, we had squash from the garden.


Zesty Italian Pasta

Ingredients:

1 lb Italian sausage links, cut into 1/2-inch chunks

1 medium onion, chopped

2 cans (14.5oz each) diced tomatoes

1/4 cup tomato paste (I omitted when I made this as a freezer meal; didn't have any in the cabiet)

16oz cooked pasta

12 cup mozzarella, shredded

Directions:

Cook sausage and onion over medium-high heat in a large skillet until meat is no longer pink; drain. Blend in tomatoes and paste; heat until hot. Toss with pasta; top with cheese. If freezing: Prepare as directed, omitting the cheese. This will make enough for 2 or 3 meals, depending on the size of your family, so you can cut the recipe in half, or split into 2 or 3 freezer bags, squeeze out air, seal and freeze. Thaw at least 24 hours in refrigerator. Heat in skillet or saucepan, add cheese and serve.


The whole family likes this meal (the Zesty Italian Pasta). I even got my daughter to try the squash, and she loved it!

Show Those Weeds Who's Boss

Got weeds in your garden? The Old Farmer's Almanac has some great suggestions on getting your weeds under control!

Outwitting Weeds
  • Go after crabgrass as soon as it appears in the garden. Dig it out by the roots with a spading fork or cover it with black plastic. Don’t let it go to seed.
  • Use a 4-inch-deep layer of organic mulch such a grass clippings, straw, or chopped leaves. Cover dirt walkways and deter weeds in the veggie garden. Turn mulch over with the soil in the fall.
  • While weeding, hold the trowel vertically (like a child holding a crayon) to eliminate strain on your wrist.
  • If digging out weeds is difficult for you, at least resolve to keep them from setting seed. Chop off their heads once a week.

Breaking the Grocery Store Code


Ever looked at your grocery store's weekly sales ad and thought, "That's a great sale price, but I really don't need 10 sticks of deodorant just so I can get them for $1 each." If so, then please realize that it's just a gimmick. The grocery store wants your business, and they'll try to do anything to sucker you in.

Here's a list of some common "tricks of the trade":
  1. Loss leaders--very common trick and talked about in a lot of blogs, so I won't go into detail. Basically, these are the groceries listed on the front page of the sales ad and are supposed to be really drastic price cuts. Unfortunately, the grocery stores in my area don't compete too well with each other and the loss leaders typically aren't a really great cut in price, at least not much when compared to discount stores like Target or Walmart.
  2. BOGO--or Buy One Get One. Very often they'll be BOGO Free; you buy one, get one free. Be careful with the BOGO's because the grocery store may have increased the regular price of the item you're purchasing. And what if you don't want the 2nd item? Take for example toilet paper. Quilted Northern 6 double rolls is on sale BOGO Free at Food Lion this week. Assuming I needed to restock, but didn't have enough for 12 rolls, I can still get 6 rolls at half the price. I don't have to get the 2nd package of toilet paper in order to get the deal. (This may vary from store to store; but I've found that Food Lion will do this.)
  3. Purchase so many items, get so much off--Just like the example of the Quilted Northern toilet paper in the BOGO up above, this is also a gimmick. For example, SunnyD is on sale at Food Lion (sorry Food Lion, I'm not picking on you, just happen to be looking at your flyer this evening). The sale price is 10/$10. Now, I don't know about your family, but I only have one refrigerator, one husband, two small children and myself. There's no way we could drink that much SunnyD. And where would we store it? Never fear, you can get one, two, three, or however much SunnyD you need, at the sale price. So instead of 10/$10, I can get 2/$2 or 4/$4...they'll all be a dollar off. Just be mindful if the sale says limit 10, don't try to buy 12 because you won't get the last 2 at the sale price.
  4. Store loyalty cards--biggest rip-off ever if you ask me. I never heard of a store loyalty card until I was in college and went to Randall's for the first time. Nearly everything in that grocery store is expensive, but if you use your store card, you can really save. That's fine, but the store, whether Randall's, Food Lion, or wherever, wants you to buy their stuff, right? So to get you into the store, they offer the sales, but you have to use your card in order to get the sale. And while you're getting the items on sale, the store hopes you'll pick up some of the more expensive items that are on the shelf. So you might get a 64-oz SunnyD for $1, but the price of a gallon of milk, which you just ran out of and need to buy, was increased to nearly $4, so have you really saved any money?
  5. Catalinas--these are coupons that print out at the register, and they can be a really great savings opportunity for you. But again, they are a gimmick to get you into the store. When I went to Food Lion a couple nights ago, I got a catalina for $2 off my next shopping trip. Great! Except now I feel obligated to go back to Food Lion before the catalina expires, and if I don't, then I'll feel very wasteful, as though I were throwing out free food.
  6. Items on display or at eye level--if there's a chance that it will catch your eye, then the store will put right there in front of you. When the store wants to move out items in their inventory, they'll put that item on display at the end of an aisle, or on a little kiosk smack-dab in the middle of the aisle, for that matter! Ever noticed the popular cereals are right at your eye level in the cereal aisle? Generally speaking, they cost more than the cheaper, more generic brands on the bottom or top shelf or at the end of the aisle. It's one tactic the store uses to get you to buy the product.
  7. Including regular-priced items in the sales ads--Walmart is notorious for doing this. They'll have rollback items mixed in with regular-priced items. Your brain is tricked into thinking it's a sale-priced item, but in fact it is not.

So those are just a few ways that the store will try to get you to "buy their stuff." It's a business, and like any other business, the more you buy, the happier the grocery store is. That doesn't mean that all gimmicks are bad. You really can get some great deals and save a lot of money if you stick to a few basic rules. Stick to your grocery list (make sure you make a list, by the way!); buy only what is on sale; buy only what you need or get into the habit of stockpiling and rotating through your stock; and don't feel like you have to buy EVERYTHING that's in the flyer just because it's on sale.

Wok's For Dinner: Parsley New Potatoes


I skipped out on Gardening Club tonight since it was raining. Hubs still took our son to his baseball game since we didn't receive a phone call saying it was canceled, probably because it just a really light rain. It's been a long, long time since I last made this side dish. We had it with celery & carrot sticks and salisbury steak (a good ol' fashioned frozen dinner that I didn't make unless you count heating it up in the microwave. :)
Parsley New Potatoes
Ingredients:
12 small red potatoes, scrubbed
1 Tbsp olive oil, divided
2 cloves garlic, minced
2 Tbsp finely chopped parsley*
1/2 tsp salt
1/2 tsp ground black pepper
Directions:
Scrub potatoes under cold water. Peel a strip of peel around each potatoe, leaving skin on tops and bottoms of potatoes. Place in a large saucepan and cover with water. Bring to a boil over medium heat and simmer, uncovered, until tender, about 20 minutes, and drain. Place potatoes in large bwl. Add 2 tsp oil. Toss to coat. In a large nonstick skillet, cook garlic in remaining oil over medium heat, stirring, 1 minute. Add parsley, potatoes, salt and pepper. Cook 1 minute, stirring. Place potatoes in a serving dish; serve immediately.
*You can also add 2 tsp chopped fresh rosemary to the skillet with the parsley, or sprinkle potatoes with a little paprika before serving. You also can use dried herbs instead of fresh; just reduce the measurements by half or to your taste.
My daughter really, really loved the potatoes. I gave her a little bit of ranch dressing, but instead of using it for her carrot & celery sticks, she dipped her potatoes into the dressing. If it works!

Check your receipts


Ever gone shopping and thought you got a great deal, only to find out when you got home that you were overcharged? It can, unfortunately, happen to the best of us.

A few weeks ago, I did some grocery shopping at a store that will remain unnamed. Later after getting home, I reviewed my receipt and, to my dismay, saw that the cashier had rung up an item one too many times. I had bought two bags of Birds Eye Voila!, but ended up paying for three. It was only a few dollars, but it was something I had not purchased. The solution was as easy as going to the store's customer service, pointing out the error, and getting my money back. Case closed, right?

Unfortunately, no. Today I went to another grocery store--completely different company--and was thrilled, literally thrilled, to find meat that had been marked down! (Melissa, you would have been so proud of me!) I NEVER see marked down meat, excluding what is in the sales flyer. Usually, they're snatched up before I have a chance to get to the store. But I had this afternoon off and took the kids with me to run a few errands. So I was the lucky one to beat the other 5pm shoppers to the store, I suppose. One deal I snagged that I am super pleased with is I found a package of Butterball ground turkey, regular price $4.49, marked down to $2.25; I used a $1 off coupon and got it for $1.25!!

I also got two packages of store-brand chicken breast tenderloins that had been marked down. One package was originally $5.29 m.d. to $2.11; the other package was $5.54 m.d. to $2.21. Unfortunately, even though I presented my store card to the cashier and all the other mark-downs and sales went through, the reduced prices for the tenderloins did not. And of course, I didn't realize it until I got home. So I will be making a trip to this particular store within the next day or two so I can get a refund for the overcharge.

I know that I was only overcharged a few dollars with both occurrences at these stores. But I wonder how often I am overcharged. If it's a few dollars here and there, multiplied over the course of the entire year, those few dollars quickly add up. And with today's rocky economy, and especially with my family's finances being stretched to the limit right now, I cannot afford to lose a few dollars here and there.

So ladies, make sure you check your receipts! There are many other ways that you could be overcharged, or even undercharged for that matter (ever noticed an item on your receipt that had one price on the shelf and another price on your receipt?) If you're overcharged, even if it means taking another trip to the store after you notice the error, get a refund from Customer Service. And if you're undercharged, still take the time to go to Customer Service, own up to the error, and pay what is owed to the store. Either way, they'll appreciate your honesty.

Wok's For Dinner: Parmesan Chicken


You will NEVER guess who I got this recipe from. Ok, well, you might guess, but it'd be a long-shot, so I'll just tell you. Ron Paul. That is, Congressman Ron Paul. From Texas. Who ran in the Primaries last year for the Republican Presidential Nomination. After I first registered to vote many, many years ago, I started receiving little mailings from Congressman Paul. He was my representative when I was going to college in San Marcos, TX. One of the mailings I received was a small cookbook from the Paul family, and that's where this recipe came from.

Parmesan Chicken

Ingredients:
1/2 cup fine, dry bread crumbs
1/4 cup grated Parmesan
4 boneless, skinless chicken breasts
1 egg, beaten
3 Tbsp butter
1 green bell pepper
1 can (8oz) tomato sauce
1/2 cup water
1/4 tsp dry oregano
1 cup shredded Mozzarella

Directions:
Combine bread crumbs and Parmesan. Dip chicken piece in egg and coat with bread mixture. Melt 3 Tbsp butter in large skillet over medium-high heat. Cook chicken in butter for 3 minutes on each side or until golden brown. Arrange green peppers on top. Mix tomato sauce, water, and oregano; pour over chicken. Reduce heat to low. Cover and cook 25-30 minutes. Sprinkle with Mozzarella and heat until melted.

Mmm, mmm, mmm, mmm, mmm! This is good! I made this as a freezer meal when I had my May once a month cooking day. I didn't have any bell pepper at the time; however, I was able to harvest one green bell pepper from our garden recently, so I used it with tonight's meal. So if you use this recipe and also make it a freezer meal, make sure you let it thaw in the frig for at least 24 hours. Put in skillet with bell pepper and let simmer for about 15 minutes. Sprinkle with mozzarella, cover, and turn off heat. It'll be ready to serve in about 5 minutes.

Storing and Preserving Fresh Herbs

June OAMM & AFM Order

Updated: 6/14/09--I decided to forego the Latin Flavors fruit/veggie box this month. Our garden is really taking off, and we're growing a lot of the items in this box.


I've created my menu plan for my June Once A Month Mom freezer meal menu plan based on my upcoming food order from Angel Food Ministries and some of the deals I've picked up on my shopping trips. The menu is subject to change; I'll probably add a meal or two by the time the big cooking day arrives. I never feel like I have enough on my list.

This month, I will be ordering one signature box, one chicken combo box, one fresh fruit and veggie box, and one Latin Flavors fresh fruit and veggie box. I may start ordering just one fruit/veggie box instead of the two as our garden continues to produce more and more, but for now we're not getting a whole lot other than squash, so I'll keep on buying the two boxes. In addition to the meats that are on the AFM menu, I bought a 10-lb beg of chicken leg quarters at IGA. I planon buying a package of country style pork ribs that are still on sale at Food Lion through Tuesday, and I'll buy one pound of ground turkey, a small ham, and a package of ground sausage. Then I should be "good to go" to do my freezer meal cooking on June 20!

Hubs is self-employed, so he sets his own work schedule and can usually take his time getting ready in the morning.

So far that's just 18 dinners; I have another 8 dinners planned that I will not make as a freezer meal, like hot dogs, cheeseburgers, burritos, and chicken tenders. Most of them are already pre-made frozen meals or will be best cooking up fresh the day we eat them.

I'm going to try to make some of the breakfast meals ahead of time. Mostly because I've harvested so much squash and it's got to get used somehow before it spoils. Squash does not can well, so I'll need to slice and freeze it or add it to a bread recipe. I'm doing both. That is, I plan to do both. :)


Wok's For Dinner: Stir Fry Beef & Broccoli


So this was supposed to be Saturday night's meal, but got postponed to Sunday night since that 3-hour fiasco I experienced at Walmart Saturday night put me getting home waaaayyy too late to make anything. But it's ok. By now I've gotten used to making adjustments to my weekly menu plans. However, having a menu planned for the week is definitely a blessing, saving me from the "What's for dinner?", "I don't know, what do you want for dinner?" routine we used to have!

Stir Fry Beef & Broccoli

Ingredients:

1 large round steak, sliced thin, fat removed (I used ribeye)

2-3 Tbsp olive oil

1/2 cup diced onion

1 lb fresh broccoli, cut into florets (I used frozen)

1 can chicken broth

4 1/2 Tbsp soy sauce

garlic powder, to taste

black pepper, to taste

2-3 red bell peppers, thinly sliced (substituted sliced carrots; didn't have any peppers when I prepared this meal ahead of time on my freezer meal cooking day)

~ 5 tsp cornstarch, to thicken

Directions:

Bown meat and onion in large skillet. Remove after cooking and set aside. Saute' broccoli and red pepper in skillet; cook until tender. Return meat and onion to skillet. Season with garlic and pepper. Combine soy sauce and chicken broth with cornstarch and add to meat/vegetable mixture. Cover and occasionally stir over low heat for abou 5 minutes. Serve with rice. If frezing: You can omit adding the vegetables and just cook the meat with the onion, seasonings, and broth mixture. Then add to freezer bag, squeeze out air, seal and freeze; thaw 24 hours in refrigerator; heat in skillet with your vegetables and serve.

Menu Plan Monday--6/8-6/14


Well, another week is here and it'll be gone before we know it! I've tried to plan this week's menu around some of the events that are on the calendar. Of course, the menu is subject to change, although I do try to stick to it as much as possible. :)


Monday--Parmesan Chicken, Salad, Buttered Summer Squash & Dill
I was supposed to make this meal on Sunday (tonight) but yesterday's meal didn't get made thanks to Walmart. So both meals got pushed back a day. Monday evenings are our weekly "Family Home Evening" night. My 2 1/2-year-old daughter is in charge of the lesson and will be using finger puppets to teach us about prayer.


Tuesday--Salisbury Steak, Parsley New Potatoes, Vegetable tray items
This Tuesday will be a busy evening for us. Hubs has a meeting at 4:30pm, and I don't get off work until 5, so I'll have him drop our daughter off at my work and she can hang in my office. Since our son has a baseball game at 6:30pm, hubs will just take our son to his meeting, then head to the baseball game afterwards. My daughter and I will be going to Gardening Club at 7pm and won't get home until after 8. So we'll eat before leaving, and hubs and son will eat when they get home. Thank goodness for freezer meals!


Wednesday--Chili Dogs, French Fries, Watermelon
Hubs' birthday!! He specifically requested chili dogs for dinner. I'll also be making Better Than "Love" Cake, his favorite.


Thursday--Broccoli Baked Potatoes, Squash


Friday--Zesty Italian Pasta, Salad, Sliced Cucumbers


Saturday--Dinner at Cici's Pizza
Our niece's birthday party. Dinner's provided for the kids, so us adults are on our own.


Sunday--Pepper Steak, Stuffed Zucchini, Broccoli & Carrots

Our son will be starting Vacation Bible School this evening at his grandma's church. VBS will last a week and will be 6:30-8pm each evening.


Notice the squash "theme" for this week? That's because we have squash coming out of our ears!! We kind of overplanted squash & zucchini in our garden this year. Little did we know how much each plant--especially the summer squash--would produce!

The Anti-List

I have always been a huge advocate for Walmart, shopping at supercenters almost exclusively for my family's grocery needs. When others were bashing WM, I was defending them with full conviction. Well, not anymore.

Now let me just add a little disclaimer from those of you with "I-Heart-WM" on your night shirts. That was me; I've been there. But there comes a point in a shopper's life when one must say, "Enough is enough."

You've seen the ads on TV; you've heard the new logo. Save money. Live better. I say, "HA!" I am more stressed out this evening that I have been in a long, long time. And I've been home for over 3 hours from my most recent WM experience.

To start, let me provide you some background information on "The Anti List." Well over a decade ago, my college roommates and I would add things to an invisible list we commonly referred to as "The Anti List." It was designated for bum deals, gadgets gone wrong, awful movies, and so forth (sometimes even people). It was really an inside joke that we would laugh about whenever we added something to it, but to this day, once in a blue moon, I'll mentally add something to that list, smile, and wonder if Jenna or Shannan do the same.

Well, all joking aside, my recent experiences at WM have just be awful. I'm tired of fighting the "we don't take Internet coupons" when the corporate policy (click here to view) explicitly says they do, plus all the other nonsense that I have experienced lately.


I've stood my ground, and I've won before, until now. Tonight, I heard the same shpeal from the cashier, "we don't take Internet coupons." I calmly explained that the corporate policy is that they do, and tried to present a copy that I had just printed a few days ago. The cashier insisted that it was the local store's policy. Hmmm, if that were the case, shouldn't there be a disclaimer on the corporate website saying the policy is subject to variation at the local store? And shouldn't there be signs posted, like at the register, stating that they are no longer accepting Internet coupons effective "such & such" date?

I asked to speak to the store manager on duty. The cashier went to get someone, and came back with a CSM, not a store manager. The CSM said that she didn't know whether or not they accepted Internet coupons. The cashier then said that some people were being written up for accepting the Internet coupons. So the CSM paged someone on her walkie-talkie, asked if they take Internet coupons, and the person responded a firm NO two times in a row. I have no idea if the person on the other end of the walkie-talkie was the store manager, another CSM, the janitor...no idea who.

But I was not a happy camper. And my budget for the groceries was based on the savings I would receive due to the Internet coupons. Nor could I afford the added expense of not using them. As I began to explain that my transactions would have to be reversed for the products that I had an Internet coupon for, I looked up and saw that another cashier was standing in front of me. The CSM and first cashier had disappeared. No explanation, no "have a nice day ma'am," no nothing! The second cashier asked me to explain what was going on because she didn't know where my groceries were in the transaction process. Some were already bagged in my cart, some were bagged at the register, some were still on the belt on their way to the register. I'm thinking, "okaaayyy, what just happened here?"

So I handed the second cashier all the products that I had an Internet coupon for and would not be buying, which she put into another cart and then took to Customer Service. Now it wasn't just a few items that were returned. I had a full cart when I went to the register. More than half of what was in my cart was taken to Customer Service. I had just a few coupons I received in the mail that I was able to use.

After paying for my now-meager purchases, I headed to Customer Service. At my last visit to WM on 5/15/09, the cashier had rung up an item one too many times, and I wanted to get my money back for the overcharge. I stood in line, waited patiently, and then the same CSM who told me that she didn't know whether or not they take Internet coupons waved me to the counter and said, "Can I help you?" I showed her my receipt from 5/15/09, explained that I had been overcharged, and ended up having to explain it to her a total of three times because shse didn't understand what I was telling her. And once she finally got it, she told me, "I'm going to the Garden Center. She'll have to help you over there," and motioned to the cashier next to her. And then she walked away leaving me with my mouth gaping open. What??!!

Shopping at Walmart, for me, has just gotten worse and worse with each visit. And I'm not exaggerating. I've been shopping more and more at other stores for my grocery needs, like CVS and Walgreens, because I can get a better deal using ECB's and Register Rewards. Today was a major errand-running day for me. I took my daughter with me and we hit Walgreens, Big Kmart, CVS, Super Target, IGA, Save-a-Lot, and Piggly Wiggly. The stores are all within a 2-mile radius, so I didn't feel like I was driving all over town. There were some deals that I knew Walmart would not be able to match, like the 10-lb bag of chicken leg quarters for $0.48/lb I got at IGA. I thoroughly enjoyed my experience at each and every store! I would have gone to Food Lion as well, and had planned to do so after going to Walmart this evening, but it didn't happen since I spent 3 hours battling it out at Walmart.

The grocery stores in my area are very overpriced--even the loss leaders on the front page of the sales ads are usually more expensive than at Walmart. It makes me long for H-E-B and Meijer from when I lived in Texas and Michigan! But there are just some things that aren't worth tolerating, and I've been feeling abused, chewed up & tossed out, after each trip to Walmart for many months now.

I am willing to hop from store-to-store one or two Saturdays each month when I do my major grocery shopping knowing that I will receive better service, better deals (if I wait for the really good ones and stockpile), have a good time doing it, and they'll take my Internet coupons! (Except Kmart, still can't convince them to take the I-coupons.) And at the same time, since I usually take my daughter with me on my grocery shopping trips, I know that I'll be teaching her and setting a good example on being thrifty with my finances while having fun doing it. Goodness knows I don't want to see me "seeing red" after each and every visit to Walmart!! That's definitely not the example that I want to set.

So when I get a bit more calmed down (I'm not seeing red, but still feeling frazzled), I am going to call 1-800-WALMART (1-800-925-6278), Walmart's customer service, to explain my dilemma and see just how concerned they are at losing a customer.

Wok's For Dinner: Don't Know The Name But It's Delicious


I literally don't know the name to this meal. And neither does my aunt who gave me this recipe. This is the title that she gave me (Don't Know The Name But It's Delicious). She liked it a lot and shared it with me when I created a family recipe book several years ago as a Christmas present to members of our families. We find it to be a tasty meal.
Don't Know The Name But It's Delicious
Ingredients:
4 boneless pork chops
1 can cream of chicken soup
1-2 Tbsp Worcestershire sauce
1/4 tsp pepper
Directions:
Brown pork chops in a skillet. While pork is cooking, combine remaining ingredients. Pour over pork chops when they are browned. Let simmer until pork is cooked through. If freezing: I used this meal in my freezer meal plan for this month. So after it had finished cooking, I placed the pork mixture into a freezer bag, squeezed out the air, sealed & froze, then thawed for 24 hours in frig; simmered in skillet until heated through.
The verdict: loved it! Although, Hubs was disappointed that our side dish of Cinnamon Apples was not Sautee'd Apples, one of his favorite dishes. At Chili's it's called Cinnamon Apples, but my version of Cinnamon Apples at home is sprinkling a little bit of cinnamon sugar over the apple slices.

Wok's For Dinner: Apricot-Glazed Pork (Turkey)


We ate this meal Thursday night. The recipe came from Betty Crocker and I decided to include it in my May freezer meal menu. I was a little nervous about how it would turn out. To be honest, I didn't even stick to the original recipe, which you can find here. I had made Pork Tenderloin (Turkey) with Glazed Onions, a Taste of Home recipe available here, and since the recipes both required pork tenderloin and apricots, I kind of combined the two to help me save time during my freezer meal cooking extravaganza.

Here's my version:

Apricot-Glazed Pork

Ingredients:

1 large sweet onion, chopped

1 Tbsp olive oil

3 Tbsp apricot preserves

1/4 cup sugar

1/4 cup balsamic vinegar

1/2 tsp salt

1/2 tsp pepper

1/2 bag frozen chopped peppers and onions

1 lb turkey tenderloin (I couldn't find a decently priced pork tenderloin, so I substituted with turkey instead)

Rice threads

Directions:

Saute' onions in olive oil in large skillet for 2 minutes. Stir in apricot preserves, brown sugar, vinegar, salt and pepper; cook until onions are tender. Place tenderloin in shallow roasting pan coated with cooking spray; top with onion mixture. Bake uncovered at 375F for 40-45 min. Let stand for 5-10 minutes. If freezing: Divide tenderloin into portions large enough for two meals. For Apricot-Glazed Pork: place tenderloin mixture into a freezer bag; squeeze out air & freeze; thaw 24 hours in refrigerator; heat on medium-high in skillet with frozen veggies; serve with cooked rice threads.

It was really good! Kind of had a little kick from the balsamic vinegar, tangy from the preserves. A really good blend of flavors. The kids, especially my 2 1/2 year old daughter, loved the meal. They really liked the rice threads, but hubs wasn't fond of that part of the meal. I thought it was nice to have something different, especially since it was really tasty. :)

Did You Get Your Free Float at Sonic?

I heard about free rootbeer floats at Sonic today, thanks in part to Melissa at Melissa's Bargain Blog, Lori at Moms by Heart, Andrea at Mommy Snacks, and Crystal at Money Saving Mom. Did I leave anyone out? I think word about this deal spread like wildfire in the blogging community.

We decided to head to Sonic after dinner to get our our free float. Sure enough, our Sonic was participating in the promotion. Woohoo! No sooner had we parked the car, than a car hop skated to our car and offered us free rootbeer floats. "Why thank you, yes,I'll take 4, please." And no questions asked, she handed us 4 floats, 4 straws and 4 spoons. Wow!! I really thought we'd hear something like, "sorry, limit one per car please."

This was certainly the easiest dessert I've ever had. Easy to get, easy to eat, easy to enjoy.

I should have brought my camera and taken at least one picture. At least I have the memory. :)

Be on the lookout for my freezer meal menu for June. I would have liked to have it all planned and posted as of today, but it just didn't happen. Our family was really swamped with activities and events the past week, plus I feel so uninspired to plan out our menu. But it needs to get done so I can plan our grocery purchases (plus set aside a stack of coupons for my next giveaway--coming soon!!!!).

So if you're interested in knowing what meals I'll make at my next Once a Month Mom cooking adventure--scheduled for June 21--be on the looking because I'll post my menu by the end of the week.

Our Garden Visitor

We had an unexpected visitor outside our garden a couple nights ago. It was cute and fuzzy and simply adorable--to look at, that is! I've never seen a rabbit so close to our house. It's like it knows there are some delectable veggies and fruits growing in our garden. I'm ready to hop on to Lowe's, buy some chicken wire and strap it to our fence!! Rabbits are definitely cute, and we've seen a lot more of them the past few weeks. I'm just not too fond of the idea of them hopping along inside our garden (I think they've managed to swipe a few of our strawberries :/).


This picture doesn't do justice to how closethe rabbit was to the fence. He had hopped away several feet by the time we managed to get the camera.

I used the digital zoom option on my camera so we could see that it really is a rabbit with two long ears. He eventually scampered off waving his cotton white tail behind him.

The Salad Spinner

My grandmother gave me a salad spinner several years ago. It doesn't get used often, because I usually buy the bagged salad. But I pulled it out Monday night when I made a tossed salad to go with our Cordon Bleu Casserole. Believe it or not, it's so much fun to use! And beneficial, too, because it removes a lot of excess water from your lettuce leaves.

After washing and tearing your lettuce leaves, place in basket inside salad spinner bowl.


Next, put the lid on, grab the handle, and proceed to spin!! (This is where the fun part comes in!)


The spinning action pulls the water off the lettuceand onto the sides of the bowl instead.


You're left with salad that's ready for carrots, cucumers, radishes and more!

Wok's For Dinner: Cordon Bleu Casserole


It's been a really long time since I last made this casserole. Hubs saw it on my weekly menu plan and practically drooled. He was really looking forward to it!
Cordon Bleu Casserole
Casserole Ingredients:
2 cups cubed fully cooked ham (I substituted deli shaved ham)
4 cups cubed cooked turkey (I used chicken)
1 cup shredded Swiss cheese (I used mozzarella)
1 large onion, chopped
1/3 cup butter or margarine
1/3 cup all-purpose flour
1/8 tsp ground mustard
1/8 tsp ground nutmeg
1 3/4 cups milk
Topping Ingredients:
1 1/2 cups soft bread crumbs
1/2 cup shredded Swiss cheese (I used mozzarrella)
1/4 cup butter or margarine, melted
Directions:
Preheat oven to 350F. In a nonstick skillet, saute' ham for 4-5 minutes, or until browned; drain & pat dry. In a greased 2-qt baking dish, layer the turkey, cheese and ham; set aside. In a saucepan, saute' the onion in butter until tender. Stir in the flour, mustard and nutmeg until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes, or until thickened. Pour over ham. Combine topping ingredients; sprinkle over the top. Bake uncovered at 350F for 25-30 minutes, or until golden brown and bubbly.
I think the whole family enjoyed the casserole. This was a freezer meal, so I had some modifications on the directions. I didn't saute' the ham, and I used olive oil instead of butter for the onions. After putting everything into a 13x9-inch pan (not a 2-qt baking dish) I placed the casserole in the freezer instead of baking it. I allowed it to thaw in the refrigerator for about 48 hours, covered the pan with foil and baked for 30 minutes. Then I removed the foil and baked for 10 more minutes until the top was a nice golden brown.
