Wok's For Dinner: Cordon Bleu Casserole


It's been a really long time since I last made this casserole. Hubs saw it on my weekly menu plan and practically drooled. He was really looking forward to it!
Cordon Bleu Casserole
Casserole Ingredients:
2 cups cubed fully cooked ham (I substituted deli shaved ham)
4 cups cubed cooked turkey (I used chicken)
1 cup shredded Swiss cheese (I used mozzarella)
1 large onion, chopped
1/3 cup butter or margarine
1/3 cup all-purpose flour
1/8 tsp ground mustard
1/8 tsp ground nutmeg
1 3/4 cups milk
Topping Ingredients:
1 1/2 cups soft bread crumbs
1/2 cup shredded Swiss cheese (I used mozzarrella)
1/4 cup butter or margarine, melted
Directions:
Preheat oven to 350F. In a nonstick skillet, saute' ham for 4-5 minutes, or until browned; drain & pat dry. In a greased 2-qt baking dish, layer the turkey, cheese and ham; set aside. In a saucepan, saute' the onion in butter until tender. Stir in the flour, mustard and nutmeg until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes, or until thickened. Pour over ham. Combine topping ingredients; sprinkle over the top. Bake uncovered at 350F for 25-30 minutes, or until golden brown and bubbly.
I think the whole family enjoyed the casserole. This was a freezer meal, so I had some modifications on the directions. I didn't saute' the ham, and I used olive oil instead of butter for the onions. After putting everything into a 13x9-inch pan (not a 2-qt baking dish) I placed the casserole in the freezer instead of baking it. I allowed it to thaw in the refrigerator for about 48 hours, covered the pan with foil and baked for 30 minutes. Then I removed the foil and baked for 10 more minutes until the top was a nice golden brown.
