Menu Plan Monday: 9/14-9/20

I'm pretty excited that my once a month cooking day is approaching. If anyone had asked me a year ago if I ever would get excited about spending 8-10 hours cooking in my kitchen all day, I would have vehemently denied it and thought they were crazy. I never imagined that I would ever commit to doing such a task, and especially never would have guessed that I would like doing it.

Here's this week's menu. As always, I'll post the recipes during the week along with instructions for making the meal a freezer meal.

Monday--Spaghetti & Italian Meatballs, Tossed Salad
This is our weekly Family Home Evening night. As of this moment, I have no idea what we'll be doing, but I'll think of something.

Tuesday--Pork Satay, Red Plums, Peas, Fried Eggplant, Carrot Sticks

Wednesday--Creamy Chicken & Chile Enchiladas, Cantaloupe, Ants on a Log

Thursday--Don't Know The Name But It's Delicious, Squash, Corn on the Cob

Friday--Meatballs & Gravy, Garlic Chive Mashed Potatoes, Corn on the Cob, Cantaloupe

Saturday--Hamburger Noodle Bake, Mixed Vegetables
This is my freezer meal cooking day!! After taking my daughter to her dance class, we'll head out to pick up our September Angel Food Ministries food order, then head home and I'll head straight to work in my kitchen.

Sunday--Onion-Roasted Chicken and Vegetables
