Conversions & Substitutions--Vegetables

I regularly substitute different vegetables in my meals. Mostly out of convenience, depending on what's in the pantry. On rare occasions, I'll substitute a vegetable I don't like for something more appealing. I mean, seriously, who really likes canned spinach or brussel sprouts??? Ugh. LOL

Vegetable Substitutions

Ingredient ~ Substitute

1 cup canned tomatoes ~ 1-1/3 cups cut-up fresh tomatoes, simmered 10 minutes

1 cup tomato sauce ~ 8-ounce can stewed tomatoes, blended in blender, or 1 cup tomato puree, or 3/4 cup tomato paste + 1/4 cup water

1/2 cup ketchup or chili sauce ~ 1/2 cup tomato sauce + 2 Tbsp sugar and 1 Tbsp vinegar

1/2 pound fresh mushrooms ~ 4-ounce can mushrooms

Legumes ~ With the exception of lentils, dried beans can be used interchangeably

Bell peppers ~ you can substitute one type of bell pepper for another (i.e., substitute green bell pepper with red bell pepper, and vice versa)

Stir fries are really versatile meals; you can add/remove all kinds of vegetables. Try using various combinations of broccoli, carrots, snow peas or sugar snap peas, bell pepper, green onion, squash, bean sprouts, and so forth
