Wok's For Dinner: Calico Beans


My Great Aunt LaVerne gave this recipe to me several years ago when I put together a family cookbook. It's great for feeding a crowd as it can be easily doubled, and it also makes for a good freezer meal, too!

Calico Beans

Ingredients:
1 lb ground beef (I used ground turkey)
3 or 4 slices bacon
1/2 cup chopped onion
1/2 cup brown sugar or sugar twin
1/2 cup ketchup
1 can Great Northern white beans
1 can kidney beans
1 can pork and beans

Directions:
Cook bacon until quite crisp. Remove from pan and break bacon into small pieces. Meanwhile, brown ground beef in pan; drain fat from pan. Add chopped onion. Add bacon to ground beef and onion. Add brown sugar, ketchup and beans. Put in casserole and bake at 350 degrees for 30 minutes.

If freezing: Prepare as directed but do not bake. Place all ingredients in gallon-size freezer bag, squeeze out air, seal, lay flat and freeze. Thaw 24 hours in refrigerator, then bake as directed.

Loved it! The beans looked so pretty with the different colors, no wonder it's called "Calico" Beans. :)
