Wok's For Dinner: Tortilla Casserole


As promised, here is the recipe for Tortilla Casserole, found on Melissa's Bargain Blog, which she got from another blogger. This was very quick to prepare, especially since the meat I used had been precooked. I just kept the meat in the freezer and pulled it out in time to thaw and be used in tonight's meal.

Tortilla Casserole

Ingredients:
1 lb ground turkey or chicken (I used the meat from cooked chicken leg quarters)
1 tub 8oz plain yogurt
1 can cream of chicken soup
Tortillas (I used flour tortillas, but I suppose you could use corn tortillas)
Mexican shredded cheese (I used cheddar)
Rice
Sliced tomato (not in the original recipe, but I added them)

Directions:
Brown the meat, breaking it into small pieces as you cook it. Mix the cream of chicken and yogurt in a separate bowl. Add in cooked meat. Put some mixture in a tortilla and rollup. Leave a little bit of the mixture for the top. Put some mixture on top and then put the cheese on top. Place tomato slices over top of enchiladas. Cover with aluminum foil. Cook for 30 minutes at 350. Serve with rice.

This was good. A little creamier than I prefer, but hubs really loved them and went back for seconds. Good meal!
