Spectacular Sides: Carrot & Raisin Sald

My mom made this meal quite frequently when I was young. My husband doesn't care for it, but I love it. I don't make it often, but sometimes, it just seems the right side dish and I can't pass up the opportunity to make it.

Carrot & Raisin Salad

4 medium carrots
1/4 cup raisins
1 2/3 oz crushed pineapple in juice, drained
2 tsp sugar
1 Tbsp lemon juice

Shred carrots into a medium bowl.

Thoroughly mix in remaining ingredients

Refrigerate salad; serve chilled.
