A Better Breakfast: Apple Date Yogurt

This isn't quite homemade yogurt, but it's a close second. It's one of hundreds of recipes that I've been hanging on to, waiting for the day that I try it out. I couldn't convince either of the kids to try it (they prefer the little store-bought cups of Trix yogurt, or the tubes of go-gurt) and hubs refused as well (he just doesn't eat yogurt at all).

So I gave it a try. It was rather tasty, a little tart thanks to the lemon juice and shredded apples. Overall, a healthy meal, and a nice alternative to a bowl of cereal for breakfast.

Apple Date Yogurt

4 apples, peeled and shredded
1 Tbsp lemon juice
1 Tbsp honey
1/2 cup dates, chopped
1 cup nonfat plain yogurt
1/4 cup chopped walnuts

In a large bowl, mix the apples, lemon juice, honey and dates. Hindsight is 20/20, 'cause I should have mixed the lemon juice just a little sooner with the apples to keep them from browning up.

Fold in the yogurt with the apple mixture.

Top with chopped walnuts and serve.

  1. Looks good, De. I'm thinking I'll have to try making apple date oatmeal next time we make instant oatmeal. I'll put this yogurt in my "things to try someday" file. Thanks!

  2. That's a great variation! I always enjoy reading everyone's tips. :)
