A Better Breakfast: Oatmeal Pancakes

I made these hearty pancakes for the family last weekend, and they were an instant hit with the kids! Even my son, who decided immediately upon hearing that "Oatmeal Pancakes" were for breakfast that he did not like them, quickly changed his mind after the first time and told me several times that he "loved" Oatmeal Pancakes. Um-hmm, I told you to just try them.

Oatmeal Pancakes

Ingredients:
1 1/2 cups oats, quick cooking or regular
2 cups milk
2 eggs, beaten
1 cup flower
2 1/2 tsp baking powder
2 Tbsp sugar
1 tsp salt
1/3 cup oil

Directions:
Pour milk over oats; let stand. Mix together flour, baking powder, salt and sugar in medium bowl. Stir eggs into oat and milk mixture. Add dry ingredients. Stir in oil. Bake on hot, lightly greased griddle until golden brown, turning only once.
