Wok's For Dinner: Chicken and Squash

Need to use up some of that squash from last year's garden that you put in your freezer (like us)? Just add it to some chicken, potatoes & tomatoes--yum!

Chicken and Squash

Ingredients:
1 cup cooked chicken
2 Tbsp olive oil
4 potatoes, peeled and diced
1 onion, sliced
2 garlic cloves, minced
1-2 yellow summer squash, cut in slices or 1-inch chunks
2 large Roma tomatoes, diced
1 tsp salt
1/2 tsp ground black pepper
1 Tbsp dried marjoram

Directions:
Heat oil in large skillet over medium heat. Add potatoes and stir to coat with oil. Cook about 10 minutes, then add onion, garlic, squash and tomatoes. Cook an additional 10 minutes. Add seasonings and chicken; stir and heat through. Serve.
