A Better Breakfast: Apple Date Yogurt

This isn't quite homemade yogurt, but it's a close second. It's one of hundreds of recipes that I've been hanging on to, waiting for the day that I try it out. I couldn't convince either of the kids to try it (they prefer the little store-bought cups of Trix yogurt, or the tubes of go-gurt) and hubs refused as well (he just doesn't eat yogurt at all).

So I gave it a try. It was rather tasty, a little tart thanks to the lemon juice and shredded apples. Overall, a healthy meal, and a nice alternative to a bowl of cereal for breakfast.

Apple Date Yogurt

Ingredients:
4 apples, peeled and shredded
1 Tbsp lemon juice
1 Tbsp honey
1/2 cup dates, chopped
1 cup nonfat plain yogurt
1/4 cup chopped walnuts

Directions:
In a large bowl, mix the apples, lemon juice, honey and dates. Hindsight is 20/20, 'cause I should have mixed the lemon juice just a little sooner with the apples to keep them from browning up.

Fold in the yogurt with the apple mixture.

Top with chopped walnuts and serve.
