My favorite rice dish is Chicken Azteca, that I cook in my crockpot.2 (15 oz) cans black beans, drained4 cups frozen corn2 garlic cloves, minced1 tsp. ground cumin2 cups salsa, divided10 skinless, boneless chicken breast halves2 (8 oz) pkgs. cream cheese, cubedcooked riceshredded cheddar cheese1. Combine beans, corn, garlic, cumin and 1/2 of salsa in slow cooker.2. Arrange chicken breasts over top. Pour remaining salsa over top.3. Cover. Cook on high 2-3 hours or on low 4-6 hours.4. Remove chicken and cut into bite size pieces. Return to cooker.5. Stir in cream cheese. Cook on high until it melts.6. Spoon Chicken and sauce over cooked rice. I make a dish called Thea special. It consists of Uncle Bens wild rice any flavor, turkey sausage (Lewis Rich), a couple hot dogs, 3 scrambled eggs, green bell pepper, red bell pepper, scallions, and peas, and whatever else vegetables I have left over in the fridge. It's good and cleans up the fridge at the same time.thea at Blacsecret@yahoo.com
