I don't know what the deal is...I had the hardest time creating my menu for this week! It shouldn't be so hard, considering I have a freezer full of meals and a list of what's available that I could pick from. My biggest stumbling brock was planning the side dishes. I want the side dishes planned, so I don't have to worry about planning them the night it comes time to make them. For whatever reason, I didn't really feel inspired. So I whipped out my trusty cookbook, looked up side dishes, and came up with a plan that I think will work for us.Wthout further ado, here's the plan for the upcoming week:
Monday -- Slow-Cooked Pulled Pork, Yellow Velvet Corn, Baked Beans, Shoestring Fries
This is our weekly Family Home Evening (FHE) night. We'll be singing some of our family songs, reviewing songs my son is learning at church, and maybe even learn some new songs.
Tuesday -- Baked Macaroni, Fried Eggplant, Garlic Green Beans
Wednesday -- Salisbury Steak, Cucumbers, Mixed Vegetables
Hubs has an Elders Quorum meeting at church this evening. We'll eat an early dinner before he heads out to the meeting.
Thursday -- King Ranch Chicken, Summer Squash, Pineapple
Friday -- Sausage Zucchini Skillet, White Rice, Fried Eggplant
Saturday -- Chicken & Egg Noodles, Crescent Rolls, Baby Broccoli w/Garlic
Sunday -- Cheeseburgers, Shoestring Fries, Corn on the Cob, Grilled Zucchini

I've had a hard time with my menu planning this week, too. I'm just grateful that I have a few days off this week since we're going out of town. I haven't made King Ranch Chicken in FOREVER. I might have to make that one next week :)
