
The menu is definitely subject to change this week. Our daughter was supposed to stay with her grandma for several days this week, but that was continent upon a week-long road trip that my son, hubs, and his dad were going on. They were planning on leaving sometime in the middle of the week once they picked a date. But now it looks like there might be a problem with fundage. So they may or may not go, which means I may or may not be flying solo this week.
Monday--Pineapple Beef Kabobs, Cantaloupe, Sliced Zucchini Bake
This is our weekly Family Home Evening night. We'll be learning about keeping the Sabbath Day holy.
Tuesday--Ham Steak & Eggs, Cantaloupe, Mixed Vegetables, Biscuits
Hubs has a meeting at church. Should not interfere with dinner.
Wednesday--Grilled Citrus Chicken, Vegetable Ribbon Salad, BBQ Beans, Corn on the Cob
Thursday--Chicken Broccoli & Cornbread Casserole, Garlic Mashed Potatoes, Vegetables Sicily
Friday--Chicken Fingers With Dipping Sauce, Sautee'd Apples, Summer Squash Casserole
Saturday--Slow-Cooked Pork Tacos, Braised Rice, Broccoli & Squash
Sunday--Marinated Shrimp on the Barbie, Garlic Peas, Eggplant Parmesan, Watermelon

ReplyDeleteThe Chicken Broccoli & Cornbread Casserole for this week is actually a pre-made meal that came from one of my monthly orders from Angel Food Ministries, so no recipe. But here's a recipe for a similar meal that I got from a friend:
Chicken & Broccoli Casserole
1 pkg stuffing mix (you could use the cornbread-flavored kind)
cooked, cubed chicken
broccoli (if fresh, then lightly steam; if frozen, you can thaw it or leave it frozen)
1 can cream of chicken soup
1 can cream of celery soup
sour cream
shredded cheese
crushed croutons
Prepare stuffing as directed; spread into a baking pan. Layer on chicken, then broccoli. In a bowl, mix together both soups plus a large spoonful of sour cream. Spread mixture over broccoli. Add shredded cheese to top, then sprinkle on crushed croutons (optional, but adds a nice crunch). Bake at 350 until hot and bubbly.
I notice you have 3 nights of chicken dishes. We too eat a lot of chicken. My kids don't care for meat, so it's either chicken or fish.
ReplyDeleteI've tried to limit the amount of red meat dishes we eat to about 1 per week. Hubs, who was a "meat & potatoes" guy when we were first married, made a complete turn-around at some point in our marriage due to all the chicken meals I've made. I can definitely tell the difference if we go out to eat (a very rare occurrence now). Before: steak and potatoes. Now: chicken and salad. I guess that's a compliment; he'd rather eat healthy than clog his arteries with cholesterol. :)
