Wok's For Dinner: Creamy Beef Over Noodles


Tonight's meal was inspired by a recipe from Steph, the Crockpot Lady over at A Year Of Slowcooking. She recently published her book, Make it Fast, Cook it Slow, which I am seriously considering buying. I want to try out some more of her recipes before I "commit," but from what I can tell, her recipes are fantastic. And tonight was no exception, even though I made some changes (I just can't help myself!).

Creamy Beef Over Noodles

Ingredients:
1 chuck roast (I think mine weighed about 3-4 pounds)
1/4 cup milk
1 Tbsp worcestershire sauce
1/4 tsp ground black pepper
1 medium onion, chopped
1/4 cup beef broth
1/2 tsp salt
2 Tbsp parsley
1 Tbsp garlic powder
4oz (1/2 block) cream cheese, softened
cooked egg noodles

Directions:
My roast was completely frozen so I did as Steph suggested and plopped the frozen meat into the crock (except I used a 6-qt crock so the roast fit nicely and I didn't have to poke at it!). Add all the ingredients except the cream cheese and egg noodles. Slow cook roast on low for 9-1/2 hours. Before serving, add softened cream cheese and stir until blended well. Serve over cooked egg noodles.

If freezing: Well, I didn't freeze this. Wasn't worth doing since I cooked this up on Saturday, and here it is Monday and we ate it. But if you did want to freeze it, take the roast out after it slow cooks and seal up in a food saver bag then place in freezer. Thaw 36-48 hours in refrigerator. Heat in microwave on medium power for 3-5 minutes. Stir in softened cream cheese and heat an additional 2-3 minutes. Then serve over noodles.

This was really, really good! It reminded me of a recipe I have for Slow-Cooked Beef Stroganoff, which uses cream cheese. Excet this recipe didn't have any mushrooms. Excluding my son, who lately has been very particular about what meat he'll eat, everyone loved this dish! And the roast turned out super tender. It literally fell apart when I tried to take it out of the crock-pot, which was exactly what I hoped it would do. :)
