Wok's For Dinner: Lasagna Casserole

Mmm...don't you want to just grab that fork and pop a warm bite in your mouth?

This was a fantastic meal that we all enjoyed, especially the kids. Little Miss had two helpings! The recipe came from my husband's aunt, and I finally gave it a whirl and tried it out.

Lasagna Casserole

Ingredients:
1 lb ground beef
1 medium onion, chopped
1/2 tsp salt
1/2 tsp pepper
8 oz medium shell pasta, cooked & drained
2 cups shredded Mozzarella, divided
1 cup cottage cheese
1 egg, beaten
1/3 cup grated Parmesan
1 jar spaghetti sauce
2 Tbsp Italian seasoning

Directions:
Cook ground beef and onion until brown; drain. Sprinkle with salt and pepper; set aside. In a large bowl, combine pasta, 1 1/2 cups mozzarella, cottage cheese, egg, Parmesa, and Italian seasoning; stir gently. Pour into baking dish coated with nonstick cooking spray. Top with beef mixture and spaghetti sauce. Cover and bake at 350 degrees for 30 minutes. Sprinkle with remaining mozzarella cheese. Bake, uncovered, 15 minutes longer. Let stand 10 minutes before serving.

If freezing: After mixing and combining all ingredients into a baking dish as indicated, cover with foil (a disposable aluminum baking dish works great). Write your baking directions on the outside of the foil so you have it when it's time to bake later on. Place covered baking dish into freezer. Thaw 48 hours in refrigerator and bake as indicated.

Loved it! A definite winner.

  1. We had a semi-lasagna tonight also. It did not have cottage cheese (Hubs does not like that or ricotta) but I used so much cheese that I got for $1 a pound a few weeks back at the cheese factory sale. It was yummy!! there are no leftovers for lunch tomorrow LOL guess hubs gets to take me out to BK or something
